These are SO EASY to make and SO TASTY. They are the perfect summer cookie, because if they get a little warm in the sun or just sitting out, the chocolate center melts a little and you get a gooey, melted chocolate and peanut butter treat to enjoy. Step 1: Use any peanut butter cookie recipe or mix you like best and mix dough according to normal directions.
Step 2: Put dough in a mini muffin pan. Fill the pan's muffin cups about 3/4 of the way full.
Step 3: While the cookies are baking, unwrap the Reese's miniature candies. If you wait to do this once the cookies come out of the oven, the dough will harden quickly and it will be more difficult to insert the peanut butter cups.
Step 4: When cookies are browning (usually the time posted on the cookie instructions or 1-2 minutes longer) take them out of the oven. Insert a peanut butter cup in each cookie while it is still in the pan.
Step 5: Once cooled, remove cookies from pan and store. Keep in mind, if you stack them on top of each other, it is possible the bottom of one cookie will have chocolate on it from the top of another. Storing in single rows is ideal.
