I do like the way you do that. I do not have it on video, but I probably should, it is one item we teach every year in the high school and college classes. i also use two knives. I use the chefs knife and a utility or paring either will work. I cut off the top and bott them stand it up. I use my chefs knife to trim off the peel leaving the eyes. I then use my paring knife to cut out the eyes. Then I slice it into daisys. This works great for grilling. We need to get together and shoot some videos sometimes.
