(No one has ever guessed it was anything other than tasty chocolate ice cream. It’s like having a great secret)
Ingredients:
- 1 avocado
- 1/4 cup of cocoa powder
- 1/4 cup of agave nectar or sugar or honey – whatever you prefer.
- 1/4 cup of coconut milk (or other milk of choice)
- 2 cups of ice
Put all ingredients in a Vitamix and mix on high while constantly using plunger to push ingredients down / mix together. This will make it like a soft serve texture. If you want it stiffer, use more ice. The mixing only take two minutes or so.
Serve immediately.
With the high ice content, it doesn't freeze well. It freezes into a solid block.

What could you substitute for the avocado?
Great question Ron. We’ve never tried substituting in this particular recipe. That said, since the avocado is intended to be a fat substitute & replace the milk & eggs normally found in ice cream, you could swap it out for those. You could also try other foods that create a similar texture like banana, thick cashew cream, hummus, etc.
