Simple to make and very few ingredients are needed.
3 beets (medium size)
1/3 cup apple cider vinegar
3 Tbsp agave nectar or other sweetener
pinch of salt (optional)
Grate the beets. I used a food processor. Mix together the sweetener, vinegar, and salt. Pour dressing over beets and chill for 20 minutes. Serve. (pictured: lemon peel as garnish)
*You have to like vinegar to enjoy this recipe.
I cup of raw beets is only 58 calories (without the vinegar or sweetener)
Beets are low in cholesteraol; they are a good source of Vitamin C, Iron, Magnesium, Fiber, Folate, Potassium and Manganese
