(Vegetarian, Gluten Free, Dairy Free optional)
- 1 head of cauliflower
- 1 tsp of butter (optional)
- 1-2 garlic cloves (depending on how much garlic you like. pressed)
- ¼ cup of milk (soy, rice, almond, or regular)
- Salt and pepper to taste
Cut cauliflower into florets and steam until tender. (I use my Cutco pot and steaming insert). Take out of pot and put in a blender. Add milk, garlic, butter, salt, and pepper and blend. It will be creamy and ends up tasting very similar to mashed potatoes.
