Cauliflower Puree

(Vegetarian, Gluten Free, Dairy Free optional)

Cauliflower PureeIngredients:

  • 1 head of cauliflower
  • 1 tsp of butter (optional)
  • 1-2 garlic cloves (depending on how much garlic you like. pressed)
  • ¼ cup of milk (soy, rice, almond, or regular)
  • Salt and pepper to taste

Directions:

Cut cauliflower into florets and steam until tender. (I use my Cutco pot and steaming insert). Take out of pot and put in a blender. Add milk, garlic, butter, salt, and pepper and blend. It will be creamy and ends up tasting very similar to mashed potatoes.
