Raw Pad Thai

This is a unique, fun, and healthy recipe.  It's a salad-type dish with the flavor and appearence of a pad thai noodle dish. (Serves 4)

 

Veggie Mix Ingredients:IMG_1490

  • 4 zucchinis
  • 3 carrots
  • 1-2 cups sugar snap peas
  • 2 limes, juiced

Sauce Mix Ingredients:

  • 1/2 cup almond butter
  • 3/4 cup coconut water
  • 2 tbsp fresh, grated ginger
  • 1/3 cup apple cider vinegar
  • 2 tbsp diced red chili (or other pepper of choice)
  • 1 tbsp each sesame oil, soy sauce, & white miso
  • 1/2 tsp cumin
  • salt to taste

Possible Garnishes:

  • Curried cashews. (mix chopped raw cashews, sesame oil, salt, and curry powder in small container.  Shake to coat and let sit while preparing recipe.)
  • Chopped cilantro
  • Lime wedge
  • Sesame seeds

Veggie Mix:  Use spiralizer on zuccinis to make zuccini noodles.  Peel carrots – continue peeling all the way through them to create thin carrot slivers.  Chop snap peas.  Add juice of limes and mix everything together.

Sauce Mix:  Put all ingredients in a blender and mix.  Toss sauce into veggies and serve immediately.  (Add any garnishes you are using before serving)
