4-6 broccoli florets
1/4 cup diced onion
1/2 cup sun dried tomatoes
1/2 cup of protein (meat, tofu, or other)
1/2 a tomato-diced or 10 grape tomatoes cut in 1/4s
1/2 cup chopped spinach
salt & pepper
Optional additions: shredded cheese, salsa.
Mix eggs in a bowl and set aside. Prep all vegetables: dice the onion, cut broccoli florets into smaller pieces, cut sun dried tomatoes into smaller pieces, cook and cut meat into smaller chunks, chop spinach, cut avocado into slices and cut tomato into pieces.
When the pan is properly heated (see frying eggs video), pour eggs in pan, add salt and pepper, and let cook for a minute or two until they start to solidify on bottom.
Add sautéed veggies and spinach to eggs. Flip omelet over and cook for 1-2 minutes. Then, option: add cheese to omelet and fold omelet in half over the cheese. Let cook for another 30 second to 2 minutes, or until eggs are done.
Put omelet on plate, top with tomatoes, avocado, and salsa (if using salsa). Serve and Enjoy!
